Do you ever crave really clean, plain food? Me too. But instead of reaching for the white bread and Vegemite, we whipped this delicious little treat up yesterday that ticked both the clean and plain boxes, but had bags of flavour too. Think that’s an oxymoron? It’s not. Food can be be plain but still taste good, I’m sure of it.
Here’s the meal in question – Kale, Quinoa, Kidney Beans, Spinach, Coriander, Cooked Onion and a light Sesame Oil Dressing…
And here’s what you need to feed four hungry people…
1 x cup of cooked kidney beans
1 x cup of cooked quinoa
1 x bunch of English spinach
1 x bunch of kale
2 x brown onions, chopped
1 x bunch of coriander, chopped
1 x large drizzle of sesame oil
1 x teaspoon of raw honey
And here’s what you need to do…
1. Throw your chopped onion into a fry pan with your coriander stalks (leave the leaves for later) and brown off.
2. While your onion is cooking, place your cooked quinoa, kidney beans, kale and coriander leaves into a large salad bowl and mix.
3. Just before your onions are cooked through, add the spinach to the pan and allow to wilt.
4. To finish, throw your onion, coriander stalks and spinach into the salad bowl and drizzle with sesame oil and a teaspoon of raw honey. Toss and serve!
Bonus tip: The quinoa and beans made a perfect (or complete) protein, so while there’s no animal products in here (aside from the raw honey), you are still getting a well-rounded dose of protein to keep you full, fit and energised. Hooray!
