3 Minute Lunch: Sprouty Goodness Open Sambos

Who doesn’t love a good sambo? Imagine fresh sprouted bread, grilled chicken, just-cooked beets, creamy avo and an entire bush of alfalfa to top things off. Oh yeah!

Here’s one I prepared earlier…

And here’s what you need…

Yummy bread of your choice
3 x grilled chicken tenderloins, coated in oregano (mine were leftover from the night before)
1/2 x spanish onion, finely chopped
1 x beetroot, finely chopped
1 x large handful of alfalfa sprouts
1 x avocado
1 x teaspoon of sweet chilli sauce (homemade if possible)
salt and pepper to taste

And here’s how you ‘make’ it…

1. Lightly toast your bread and smear on avocado and sweet chilli sauce
2. Cover in chicken, spanish onion and beets and season to taste
3. Top off your sambo with alfalfa sprouts
4. ENJOY!

See, it really is the simple things in life that bring the most joy. This easy, tasty sandwich had me (and my tummy) smiling all afternoon.
