Raw Meal Monday: The MEGA Salad

When I tell people that salads can, in fact, be a very tasty dinner option, I often get looks of pity. Thoughts of ‘Oh gosh, this poor girl is delusional’ are often cast my way, as meat lovers dream of their juicy steaks and cast dead iceberg lettuce leaves to the side in disgust.

HOLD ONTO YOUR HATS, PEOPLE!

This salad is like no other you’ve tried before. It’s a meal in itself and will leave you full for hours, upon hours, upon hours, without feeling heavy, or bloated, or sick. When we have this (at least twice a week) we fill our bowls to the max, letting them overflow with bright, vibrant veggies that are fresh, raw, and packed with goodness.

Here’s what you need:Β 

Every seasonal vegetable that you have in your fridge. Think: rocket, carrot, capsicum, avocado, cabbage, sprouts, tomato, red onion, raw garlic, roast sweet potato (we often cook up a big batch just to snack on and have handy for salads like this), bean shoots, herbs, baby spinach, living lettuce…the list is endless.

We also like to add some form of protein in there, too. So, for Raw Meal Monday that may be some nuts and seeds like almonds, pepitas, sunflower seeds, and chia seeds. Or, some marinated tofu is also a massive winner in this salad. We get the one in the Chinese Five Spice marinade. Oh man, it’s delicious.

Simply throw everything you’ve got into a massive bowl and toss it around. Then, sprinkle on your favourite dressing. We like cold-pressed olive oil mixed with apple cider vinegar and a touch of curry powder for something more Indian-inspired. Or for an Asian twist, we mix up sesame oil with a dash of raw organic honey and apple cider vinegar. The option are endless, and the result is a menagerie of colour and goodness that you simply can’t resist. It makes the old steak and three vege look a little bland, if you ask me.

    Hi Yaz,
    I made a Mega Salad for dinner tonight and it was DELICIOUS!
    Before dinner, my bf complained that we weren’t having any meat, but after dinner he said that it was one of the best things I have ever made for him (and we’ve been together 5 years)!
    So thank you for sharing your yummy recipes and inspiring me to eat more healthily – today I went to a wholesale store and stocked up on some of the items you talked about in your recent ‘pantry’ posts πŸ™‚
