Eat this: Brown Rice & Tofu Patties

Easy. Tasty. Healthy. 

For me, these 3 simple words make the scaffolding of my mid-week meal planner. If an idea, or recipe I’ve seen, has all these 3 things going for it, then it’s a winner. Let’s give it a whirl!

Inspired by these brown rice patties I used to eat years ago, and with half a cube of tofu that needed to be eaten in the fridge, I set about creating this insanely tasty dinner from scratch. Had I ever made anything like this before? Nope. But as it turns out, they’re easier than a rabbit on heat.

And here’s what you need to feed 4 hungry people…

  • 1 cup of COLD cooked brown rice with wakame. Cook it the night before and keep in fridge overnight.
  • 1/2 large cube of firm tofu. Remove any excess liquid with a paper towel before processing.
  • 3 carrots
  • 1 large onion
  • 2 cloves of garlic
  • 1 teaspoon of cumin
  • 1 teaspoon of coriander
  • 1 teaspoon of paprika
  • 1 dash of Himalayan rock salt
  • Pepper to taste

Then do this…

  • In a food processor, blitz the onion, garlic, and carrot so they’re whizzed into small pieces. Fry off in a pan.
  • Next, blitz the firm tofu so it’s small, too. Add to carrots and onion in pan.
  • Now, throw the veggies and tofu in a bowl with the brown rice and mix together with spices, salt, and pepper. Judge the consistency of the mixture, you want it to stick together, so you may need to add an egg to help bind it.
  • Once you’re happy with the mixture, heat a fry pan on high heat and add some oil. Once the pan is hot, throw some egg rings in before spooning the pattie mixture into each egg ring. Cook until brown on one side, flip, cook, take off heat and sit the patties on paper towel to absorb any oil.

I served the patties with a little sweet-chili sauce and a japanese-style cabbage and avocado salad with sesame and miso dressing. AMAZING!

There’s only ever going to be one YOU!

I have never been one of those flexible chicks who can put their legs behind their head and sit there with a smile. In fact, I struggle to do far easier yoga poses like half pigeon without feeling like my hips are about to become displaced.

So, you’d have to wonder why I signed up for a 3-hour hip opening workshop with the delightful Kathryn Budig – the second workshop in as many years that I’ve attended of this globe-trotting yogi’s. The reason, of course, if that what you often struggle with the most, is what you need to work on more than any other. For me, that’s hips. We’re in a love/hate relationship right now.

Aside from the obvious benefits of the yoga poses and dedicating 3 whole hours to my tightly strung hips, Kathryn managed to drop a few not-at-all-yogi-like phrases in her workshop that resonated with me.

Case in point: There’s only ever going to be one YOU! 

Obviously! But Kathryn’s point was made in regards to living your life as best you can. Not putting too much pressure on yourself, always doing your best, and perhaps most importantly, making the most of your life. Your life. Because there’s only ever going to be one you, so you may as well make it best version of yourself that you possibly can, without the pressure to be something you’re not.

Raw Meal Monday: The Raw Dessert Kitchen’s Balls of Steel

I am constantly ashtonished by the skill of some bloggers out there. Especially the raw food types who seem to turn everyday cravings into healthy works of art.

Take Karolina Eleonora from The Raw Dessert Kitchen, who manages to make Raw Dessert Pizza, or Banana Split, or these super simple Balls of Steel look insanely yummy and edible. Even for people like you and me, who are’t 100% raw, but have a keen interest in adding more raw food to our weekly menu.

So, for this week’s Raw Meal Monday, may I introduce you to Balls of Steel – Karolina style.

Here’s the visual…

And here’s what you need…
• 60 g or 0.5 cup shredded Cacao butter
• 1 cup Dates (pitted but not soaked)
• 1 cup hulled Hemp seeds
• 2 pinches of Himalayan salt
• 1/4 teaspoon real Vanilla
• 5 tablespoons raw Cacao powder
• 1 tablespoon Maca
• 3 tablespoons Lucuma*

And here’s what Karolina suggest you do…

Slowly melt the Cacao butter in  a water bath. Meanwhile pit the dates. Combine the melted Cacao butter with the Hemp seeds and make a paste in your food processor. Add the dates and process. Add the rest of the ingredients and process until incorporated. Form into balls and roll them in shredded coconut. These are best enjoyed well chilled!

While the ingredients may be a little harder to get your hands on, than say, regular chocolate balls, once you’ve tracked them down the method of putting these delicious morsels together is super simple. And best of all, the result is incredibly tasty. Try it and see.

*Lucuma (said Loo-Koo-Mah) is a tropical fruit found in South America. As it’s not found here in Australia, look for the powered version at your health good store to add sweetness to your desserts without the calories of sugar. It tastes a little like caramel. If it’s too hard to find, you could switch it out for Agave Nectar instead.

Advanced Probiotic Skincare? Yes, please!

In case you’ve only met me through The Happiness Cocktail, I should probably explain that I’m also a beauty editor. My monthly work can be seen in Good Health Magazine as of the June issue (buy it, it’s going to be EPIC), and my weekly work can be seen on I also write for The Style Glossy, and am in the process of writing my first (of many) eBook. The Leap Of Faith…

The other day, my sister and I decided to let our hair down. She had a baby 6 weeks ago, and I’m known to live on the edge from time to time. Sensing that she needed to have a moment of pre-baby Ley for just a couple of minutes, I pitched the idea of going for a swim at my parents’ place. It was a hot day, she needed to get out of the house, and her gorgeous baby, Heidi, looked like she was up for an adventure with Aunty Yaz and mum.

Next thing you know, with baby safely tucked up in her bed, my sister and I were leaping into the pool – minus our swimmers. My sister had forgotten hers and I didn’t want her to feel self-conscious.  So yep, we jumped in nude! Naked! Freeeeeeee!

WOW! What a feeling that was. I’ve heard stories about the freedom nudist retreats give you and laughed so hard, I’d start to cry. It’s not like I’m always clothed, but it’s been a good ten years since I’ve been skinny dipping.

Buy hey, there’s something to be said about liberating yourself to the point of not caring if the neighbours cop a peek at you in the buff. To be honest, it’s exhilarating. My sister and I are still laughing about it now, relishing in our moment of reckless abandon. The lesson? Clothes are overrated, peel them off and take a leap of faith. It will be worth it.
