Raw Meal Monday (on Tuesday): Another winning ice cream recipe

Granted, this meal isn’t 100% raw thanks to the inclusion of milk, but if you wanted to, you could make the almond milk at home and then, dear Happies, this bad boy would be raw all the way.

My fascination with making ice creams has now exploded into a twice weekly event, quickly filling up lonely popsicle molds with reckless abandon, throwing in all kinds of tasty treats to roadtest on husbands, family, friends, and now, of course, you. Hooray!

This week’s flavour comes in the form of banana, coconut, cinnamon, chia seed, honey, almond, and milk. It’s pretty much my morning smoothie, frozen into tasty little icy delights, ready to pounced on whenever you get the urge. A word of warning though – they’re kind of addictive.

Here’s what you’ll need to make 6 ice creams…

1 x banana
1 x baby coconut (drink the water, use the flesh)
2 tbls of cinnamon
2 tbls of raw honey
1 tbls chia seeds
1 handful of almonds
1.5 cups of almond/rice/soy/regular milk

Whiz all the ingredients in your whizzer of choice until they’re a smooth, creamy consistency. Spoon into ice cream molds, pop in the freezer, and wait, impatiently, until they’re all frozen and ready to eat. YUM!

    This looks seriously delicious Yaz. I am so passionate about frozen treats that I actually bought myself a soft-serve icecream (or fro-yo in my case) maker. I’m going to throw these in there.
